Paul McGreevy – Vintage Group
Paul is a Red Seal chef that has been in the industry for over 14 years. He brings a wealth of experience from his time with local restaurants including Saint Germain, Wildwood, consultant to the Concorde Group (Tangerine Supper Club), Teatro, Il Sogno, as well as a variety of establishments over in Europe.
After opening Saint Germain in the first year they won not only Best New Restaurant in Calgary, but also one of Canada’s Top 10 Best New Restaurants by enRoute Magazine. He credits his time in Europe to helping develop his unique style and approach to food and the way he develops his dishes.
Paul recently joined Vintage Group (Redwater Rustic Grille, Vintage Chophouse, Bookers, Rush, Rise Bakery & Cafe) as an Executive Chef to oversee re-development of existing projects and also assist on new projects for the restaurant group.

Bringing creativity and passion from their respective Mediterranean and Latin heritage, their influences are introduced to Asian flavors and sensibilities to create a menu and atmosphere that represents a harmonious culinary adventure that will leave a lasting impression. Rogelio was born in Colombia, and has cooked internationally in France , Spain and Israel. In Calgary he has worked at Teatro, Wild Wood, Vintage and now at Alloy. Rogelio’s food is simple but packs a lot of flavor you can taste: Latin, Mediterranean and Asian in almost every one of his creations.
